Chicken A La King with Rice
Well, last weekend was my daughter's birthday party, so we were lucky to have a lot of pizza left over which took care of things for two days, she also had an ice cream cake, enjoyed that as well!!
But that caused a small problem, we had no room in the fridge (filled with pizza and stuff for party) or the freezer (ice cream cake)!
At this point I had to resort to my favorite meal...Costco roasted chicken!! I cook for six people and that chicken gets me through at least three meals. WOW!! Now,of course, you don't have to buy it at Costco,you can either make your own or get a smaller one at your local market.
I will list everything you need first, so you can be prepared for the next day's meal!!






Chicken A La King with Rice.

Things you will need:
One roasted chicken
Rice
Butter
Flour
Milk
Garlic
Lemon juice
Chicken bouillon

Chicken is ready, so half the work is done!
Prepare your rice.

A La KING SAUCE:
In a small sauce pan on medium low heat,
Melt 1 stick butter
Add  3/4 cup Milk
Add  1 chicken bouillon
Add  2 tbsp. flour

(mix well so no flour clumps are present)

Add 1/2 tsp. ready crushed garlic cloves
Add 1/2 tsp. lemon juice
some salt and pepper

Some enjoy a little mushroom or peas with this sauce, but that is up to you.
Keep stirring until sauce start to boil gently and set heat to low,your sauce is now ready!

**Keep an eye on the sauce, because if it boils over you will have quiet a mess and trust me it boils over really fast!!!




How easy was this? Not only is this delicious but with the ready chicken and minute rice, the whole meal will take you less than ten minutes to prepare!!! Also make sure to save any leftover sauce for the Pizza recipe which I will post in a few days!!

As mentioned before, my daughter had a birthday party this weekend but her actual birthday is today, even though she had a cake I still
like to celebrate the day of so I decided to bake her a chocolate chip cookie cake. I used this recipe by Emeril and it turned out pretty good, actually
it was really good, the recipe calls for round pizza dish but I used a rectangular cake pan and only used regular milk chocolate chip. 
just to let you know I had no white chips or any of the nuts listed on hand but it still came out tasting yummy.
Great with cool whip or use to make ice cream sandwiches.



Chocolate Chip Cookie Cake
Ingredients:
2 sticks unsalted butter, softened
1 cup packed light brown sugar
1/2 cup granulated sugar
2 large eggs
2 cups plus 2 tablespoons all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons pure vanilla extract
1 1/2 cups bittersweet chocolate chips
3/4 cup white chocolate chips
1/2 cup chopped macadamia nuts
1/2 cup chopped toasted walnuts
Confectioners' sugar, for garnish
Sweetened cocoa, for garnish


Directions:
Preheat the oven to 375 degrees F. 
Line a 14-inch, light colored, round pizza pan with parchment paper and grease the parchment paper.
In a large bowl, cream the butter and sugars. Add the eggs, beating well after the addition of each.
In a bowl, combine the flour, baking soda, and salt and mix with a whisk. 
Add to the butter mixture, mixing to incorporate, and add the vanilla extract. 
Fold in the dark and white chips and the nuts. 
Spread across the bottom of the prepared pan and bake until the edges are golden and the cookie is set but the center is still slightly soft, 20 to 25 minutes. 
Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
To serve, sift confectioners' sugar and sweetened cocoa over the top, and cut into wedges or squares.
