Curry Chicken with Rice 


Our family loves rice, so having it two days in a row is never a problem, I  have plenty of  Costco chicken left from yesterday , but if you like variety, just skip a day but make sure to keep that chicken around for our  next recipe.
Today, I will prepare the Curry Stew (should take about 10 minutes) and serve over rice.


Curry Chicken with Rice

Things you will need:

Left over Chicken Left over Rice
Yogurt
Egg
Flour
Curry powder
Chicken bouillon
Salt and Pepper


Curry Stew:


8 oz. yogurt (Greek is the best but low fat will do)
1 Egg
2 tbsp. flour
3 tbsp. yellow curry powder  
Salt and pepper 

Mix well in pan all ingredients except for the bouillon *see note below*
on medium heat, stirring frequently, let sauce heat up and add bouillon
Make sure to scrape the sides and bottom of pan as you stir to avoid sticking.
Still on medium heat let the sauce start to come to a gentle boil and 
add chicken (small pieces or large shredded). Let the stew simmer on 
medium low for a few minutes and your dinner is ready!!



Salad:
 Add a green salad with
 lettuce, tomatoes and cucumbers with a
really easy dressing. Of course, you can add any other items to this salad that you like... 



Easy Salad Dressing:
1 tbsp. mayo (light and low fat is OK also)
1 tbsp. ketchup
1/2 tsp.lemon juice
mix well and add to salad
